Watermelon Margaritas

To prepare glasses:
- 1 lime wedge
- 2 Tablespoons sugar in a shallow bowl or plate
Rub the rims of glasses with lime and roll in sugar to coat rims.
- 3 cups cubed seedless watermelon, frozen for at least two hours*
- Juice of 2 small key limes
- 4 ounces tequila
- 2 ounces Triple Sec or Cointreau (orange flavored liqueur)
Combine in a blender and puree until smooth. Add ice cubes to thicken or water to thin mixture as needed. Pour into prepared glasses and garnish with a wedge of watermelon or slice of lime if desired. Omit the alcohol and serve to children for a refreshing punch.
*Watermelon may be frozen for several weeks. Use a melon baller or ice cream scoop and place on a foil or waxed paper covered cookie sheet. Freeze for thirty minutes and then place in a tightly sealed plastic bag or plastic container until ready to use.
Makes six servings.
For Watermelon Daiquiris, omit the tequila and Cointreau and add 6 ounces of light rum and a six ounce can of frozen limeade or pink lemonade. Blend and serve as above.
