Mint Syrup

  • 2 cups water
  • 2 cups sugar
  • 2 cups fresh mint

Bring to a boil and boil for one minute until sugar is completely dissolved. Stir in 2 cups of fresh peppermint or spearmint, crushing herbs gently before adding. Allow to sit for fifteen minutes. Strain and discard herbs and bottle syrup in a sterilized glass container.

Refrigerate for up to two weeks.
